The fall foliage is still so beautiful

Late this afternoon I caught a glimpse of the pear trees swaying in the wind and went out to get a picture of them. Beautiful color still and noticed the wind was bringing in the cooler weather. This gal is ready for more cooler weather to snuggle into some well worn sweaters and snuggle up with my family as we watch the flickering wood burn in the fireplace. Happy conversation as we relax this weekend sipping on our cocoa or coffee and eating our magic bars. (recipe is on my food tab)

Pamela's Gluten-Free Bread

This is the first time to try and I have to say it was a success.

Pour your mix and yeast into a BIG bowl
In a 2 Cup Liquid Measuring Cup add:
1/3 cup of oil
2 eggs
and finish it with warm water until it gets to the 2 cup mark
add 2 Tablespoon of cold water
Pour into your dry mixture
Using a Heavy Duty mixture with the whisk attachment on med/high for 3 minutes
Oil up your loaf pan and pour bread into it.
Let it rest of the counter for 60 to 90 minutes.
 (I actually let mine stay till 80 minutes...I'm sure the house temperature and all has something to do with the length of time) Mine did rise quite a bit before I put in into the oven.
Bake at 350 degrees for 60 minutes.
 (in between the time I did check it and switch my loaf pan around to get my loaf more evenly browned on top)

It has cooled for 10 minutes and sliced with my electric knife.
Came out beautiful, smells and taste wonderful. 
We really like it grilled with a little butter.

The Great~ Southern Living November 2012 Issue

Anyone else get all excited when they go to the mailbox and see their Southern Living Magazine???? This month issue is so elegant plus it has mouth watering photo's of the Thanksgiving Celebrations 93 Holiday Recipes! It keeps me dreaming and filing away photo and inspirations of how I want to remodel our kitchen. I keep telling my husband when we get a more functioning kitchen he will think he's die and gone to heaven with my cooking. Tucking away all these magazines and saving those recipes for the day I have that "Dream Kitchen".  I just hate my cabinets where you have to pull everything out of the front of the cabinet to get to those bigger pans and processors things that are store in the back of the cabinet. I know some of you all think why don't you keep them up on your counter top. Some may look okay but I've not got a lot of counter space and I hate to have it cluttered looking and plus dog gone it you have to have some decorative piece up on it to look pretty and all. I know I'm not a practical gal.... it's all about how it looks. Wish I wasn't that way but that how I function. Just so you know...If you do not subscribed to the Southern Living Magazine you really should pick up the November issue wherever you shop. Here's a look at the cover and some sneak photo's of the inside.

The Moist German Chocolate Cake

Wanted to share the cake/cupcakes everyone is requesting from me of late.
Super Easy and so moist!

1. Buy Duncan Hines German Chocolate cake mix. Prepare as directed on back of box.

2. Preheat 350 degrees for metal or glass pans. 325 degrees for dark or coated pans.

Grease side and bottom of pan with olive oil.
The box says to flour lightly but I NEVER do
and it comes out very easy
 The box says to add a
1 1/4 Cups of WATER
1/3 Cup of Oil
3 Large Eggs 
  Blend dry mix, water, oil and eggs in large bowl at low speed until moistened(30 seconds) 
Beat at medium speed for 2 minutes
Pour batter in pan.
  In another bowl combine
1 (8oz)package Cream Cheese,softened
2/3 Cup Granulated Sugar
1 Egg
Mix until smooth.
1/2 Cup Chocolate Chips chopped 
Fold in with the Cream Cheese mixture.
1/2 Cup of flaked Coconut and I like to toast if for a few seconds until it gets golden and the coconut smell really comes out.
 Fold in with the Cream cheese mixture.
                         Drop spoonfuls into cake mixture.                    
                                                                                                                                                                                                                   
 
 Bake 30 minutes for 13 x 9 pan or
20 minutes for cupcakes 
  Icing that I like to use is:
1 (8oz) Cream Cheese
1/4 Cup Butter
2 Cups Powdered Sugar
1 1/2 tsp vanilla
Mix with blender on low until it is incorporated together adding Powdered Sugar slowly or you will have it flying everywhere and most importantly just............
  Enjoy eating your easy cake!

~P.S. I have made this without coconut and it is still very yummy.
 You may also use mini choc. chips & put nuts in it.
 The options are many.

Well this squirrel has been needing some attention for some time now. Being that it is fall and I've been seeing these little critters run everywhere with their jaws full thought it was time to make him look a little better. Washed and scrubbed him good, let him dry and then spray painted in several different colors. I'm not totally happy how he turned out, but used what paint I had. Didn't realize some of those textured spray paints where so costly. Anyhow, I will probably change how I've got it but just thought I'd go ahead and show it now. Time gets away and before long it's gonna be time to decorate for Christmas.

Taking a moment this afternoon to Enjoy

 Walking out my front door enjoying how my Lord gives us things to take our breath away!
 Yep, we've got a lot of pine needles and 
pine cones in our driveway.
 Red berry bushes up next to both sides of the house.
The dogwood trees up next to the fence and the side yard.

Finishing up on our garden 2012

Little by little I'm pulling up the plants outta the garden. Saturday pulled the okra up and yesterday pulled the pepper plants up.
 This is what I got off the plants yesterday.
 I think they make such a beautiful picture of color.
We have beans to get out but we are waiting for them to dry out so we will have them to plant next year. Daddy also has planted some fall turnip greens, so we have a little while to go before Dave gets into it to level out for next spring.

Halloween witch pail




Love my little witch pail with leaves.
I came up with this just this morning.
The little white pail is a find from Goodwill that was just .49 cent. It had a star and bow metal piece hanging from it with a patriotic theme. Found the broom just the other day at Goodwill for .49 cent too. Just added the bow and I already had the black candle stand. I absolutely love a bargain.
