Well friends...............I have been cooking up stuff, but honestly just don't like to take the time to capture it on picture and steps. Just to much for this mama to do. Usually just trying to get something cooked for my little family to eat before it's time to get cleaned up, snuggle time, devotion and prayer time before lights are out. My blogging time usually comes when the guys are asleep and I've got a quiet moment. You will mostly find me curled up with a quilt my sweet grandma had made (pressing my nose up to it to faintly get a smell of her and missing her) and sipping on something. I have good intentions to post more but then I get caught up with my fellow blogger thoughts, writings and pictures and seem to forget mine. Oh well, this is what I enjoy doing. I do intend to capture some of my cooking soon. Just yesterday I cooked a soup that was all my own and now have to set down and write out the steps that I did so I can get the same soup twice. Even my daddy came over and said you better write it down so we can have it again. Something for my dad who normally doesn't care for a lot of soup. Also made Magic Bars that I've been eating too many of.
That recipe is easy so I will share: (this one I did not come up with)
Magic Cookie Bars
(Makes 24 bars)
1/2 cup margarine or butter melted in 13 x 9 dish
1 1/2 cup graham cracker crumbs~sprinkle over margarine that has been melted in oven
Pour your:
1 (14 -ounce)can Sweetened Condensed Milk on top of graham cracker crumbs then
1 (6-ounce) package semi sweet Chocolate chips then
1 1/3 cups of flaked coconut then
1 cup of chopped nuts (I like pecans and this is totally optional)
Preheat oven 350 degrees (325 degrees for a glass dish)
After you have added all ingredients press down firmly.
Bake 25 - 30 minutes or until lightly browned.
Cool. Chill thoroughly if desired. Cut into bars.
Store loosely covered at room temperature.
I have also made this with dried cranberries(I think I used Ocean Spray Cranberries) with white chocolate morsels
Pamela's Gluten Free Bread
This is the first time to try and I have to say it was a success.
Pour your mix and yeast into a BIG bowl
In a 2 Cup Liquid Measuring Cup add:
1/3 cup of oil
2 eggs
and finish it with warm water until it gets to the 2 cup mark
add 2 Tablespoon of cold water
Pour into your dry mixture
Using a Heavy Duty mixture with the whisk attachment on med/high for 3 minutes
Oil up your loaf pan and pour bread into it.
Let it rest of the counter for 60 to 90 minutes.
(I
actually let mine stay till 80 minutes...I'm sure the house temperature
and all has something to do with the length of time) Mine did rise
quite a bit before I put in into the oven.
Bake at 350 degrees for 60 minutes.
(in between the time I did check it and switch my loaf pan around to get my loaf more evenly browned on top)
It has cooled for 10 minutes and sliced with my electric knife.
Came out beautiful, smells and taste wonderful.
We really like it grilled with a little butter.

MOIST CAKE
Wanted to share the cake/cupcakes everyone is requesting from me of late.
Super Easy and so moist!
1. Buy Duncan Hines German Chocolate cake mix. Prepare as directed on back of box.
2. Preheat 350 degrees for metal or glass pans. 325 degrees for dark or coated pans.
Grease side and bottom of pan with olive oil.
The box says to flour lightly but I NEVER do
and it comes out very easy
The box says to add a
1 1/4 Cups of WATER
1/3 Cup of Oil
3 Large Eggs
Blend dry mix, water, oil and eggs in large bowl at low speed until moistened(30 seconds)
Beat at medium speed for 2 minutes
Pour batter in pan.
In another bowl combine
1 (8oz)package Cream Cheese,softened
2/3 Cup Granulated Sugar
1 Egg
Mix until smooth.
1/2 Cup Chocolate Chips chopped
Fold in with the Cream Cheese mixture.
1/2 Cup of flaked Coconut and I like to toast if for a few seconds until it gets golden and the coconut smell really comes out.
Fold in with the Cream cheese mixture.
Drop spoonfuls into cake mixture.
Bake 30 minutes for 13 x 9 pan or
20 minutes for cupcakes
Icing that I like to use is:
1 (8oz) Cream Cheese
1/4 Cup Butter
2 Cups Powdered Sugar
1 1/2 tsp vanilla
Mix
with blender on low until it is incorporated together adding Powdered
Sugar slowly or you will have it flying everywhere and most importantly
just............
Enjoy eating your easy cake!
~P.S. I have made this without coconut and it is still very yummy.
You may also use mini choc. chips & put nuts in it.
The options are many.
